Homemade Chicago-Style Deep Dish Pizza
Ingredients:
For the Dough:
- 3¼ cups all-purpose flour
- ½ cup yellow cornmeal
- 1½ teaspoons salt
- 2 teaspoons sugar
- 2¼ teaspoons instant yeast
- 1¼ cups room-temperature water
- 3 tablespoons melted unsalted butter
- 4 tablespoons softened unsalted butter
- 1 teaspoon + 4 tablespoons olive oil
For the Sauce:
- 2 tablespoons unsalted butter
- ¼ cup grated onion
- ¼ teaspoon dried oregano
- ½ teaspoon salt
- 2 minced garlic cloves
- 1 (28-ounce) can crushed tomatoes
- ¼ teaspoon sugar
- 2 tablespoons coarsely chopped fresh basil
- 1 tablespoon olive oil
- Freshly ground black pepper
For the Toppings:
- 1 pound mozzarella cheese (shredded)
- (Pepperoni)
- ¼ cup grated Parmesan cheese
Instructions:
1. Make the Dough: Whisk flour, cornmeal, salt, sugar, and yeast in a bowl. Add water and melted butter. Mix until glossy and smooth. Allow dough to rise for 45-60 minutes.
2. Make the Sauce: Heat butter in a saucepan. Cook onion, oregano, and salt until brown. Add garlic, tomatoes, and sugar. Simmer for 25-30 minutes. Stir in basil, olive oil, salt, and pepper.
3. Laminate the Dough: Roll the dough into a rectangle. Spread softened butter, roll into a cylinder, and flatten. Repeat with the other half. Let rise in the refrigerator for 40-50 minutes.
4. Bake the Pizzas: Coat cake pans with olive oil. Roll out dough, transfer to pans, and add toppings. Bake at 425°F until golden brown, 20-30 minutes.
