I AM A LOVER OF CHICKEN WINGS

Ingredients:

  • 1 kg (2.2 lbs) chicken wings
  • 2 tbsp aluminum-free baking powder
  • ½ tsp salt
  • ½ tsp pepper

Barbecue Sauce:

  • 300 ml (1 ¼ cups) tomato ketchup
  • 4 tbsp white wine vinegar
  • 5 tbsp dark brown sugar
  • 2 tbsp black treacle or molasses
  • 3 tbsp honey
  • 2 tbsp vegetable oil
  • 1 tbsp Worcestershire Sauce
  • ½ tsp mustard powder
  • 1 ½ tsp smoked paprika
  • ½ tsp black pepper

 

Instructions:

  1. Cut wings, dry, and toss with baking powder, salt, and pepper.
  2. Bake at 120C/250F for 30 mins, then 220C/425F for 40-45 mins until golden.
  3. Mix barbecue sauce ingredients, heat, and simmer for 5 mins.
  4. Toss wings with sauce and serve.

Tips:

  • Dry wings thoroughly before coating with baking powder.
  • Use aluminum-free baking powder to avoid bitterness.
  • Extra sauce can be served on the side.

Can I make barbecue wings ahead? You can make wings ahead (without sauce) and refrigerate. Reheat for 5-6 mins at 200C/400F. Barbecue sauce can also be made ahead, refrigerated, and reheated.
