Zesty Lemon Cream Cheese Cookies

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 1/4 cup cream cheese
  • 1/4 cup lemon juice
  • 1 large egg
  • 1 1/2 tbsp lemon zest
  • 2 tsp cornstarch
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt

Preparation:

  1. Cream butter and cream cheese, then mix in sugar until creamy.
  2. Add egg and vanilla, beating until fluffy.
  3. In a separate bowl, mix flour, lemon zest, cornstarch, baking soda, and salt.
  4. Alternately add flour mixture and lemon juice to the cream cheese mix.
  5. Form dough, chill for 1-2 hours, then bake at 350º F for 10-12 minutes.

For the icing, whisk powdered sugar, milk, and lemon juice. Drizzle over cooled cookies and let set – they’re simply irresistible!
