Ingredients:
- 2 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter
- 1/4 cup cream cheese
- 1/4 cup lemon juice
- 1 large egg
- 1 1/2 tbsp lemon zest
- 2 tsp cornstarch
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
Preparation:
- Cream butter and cream cheese, then mix in sugar until creamy.
- Add egg and vanilla, beating until fluffy.
- In a separate bowl, mix flour, lemon zest, cornstarch, baking soda, and salt.
- Alternately add flour mixture and lemon juice to the cream cheese mix.
- Form dough, chill for 1-2 hours, then bake at 350º F for 10-12 minutes.
For the icing, whisk powdered sugar, milk, and lemon juice. Drizzle over cooled cookies and let set – they’re simply irresistible!
