Ingredients:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup unsalted butter, chilled
- 1 cup grated sharp cheddar
- 1/4 cup sun-dried tomatoes, diced
- 1/4 cup green onions, chopped
- 3/4 cup buttermilk
- 1 large egg, beaten
Instructions:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, whisk flour, baking powder, salt, and pepper. Cut in chilled butter until crumbly.
- Add cheese, tomatoes, and green onions. In a separate bowl, whisk buttermilk and egg.
- Pour buttermilk mixture into the dry ingredients, stir until a dough forms. Turn onto a floured surface, knead briefly.
- Divide, shape into rounds, cut into wedges, and place on the baking sheet. Brush with beaten egg. Bake for 18-20 minutes until golden. Serve warm with butter or jam. Enjoy with soup or meats and vegetables.
