Cheese and Tomato Scones Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup unsalted butter, chilled
  • 1 cup grated sharp cheddar
  • 1/4 cup sun-dried tomatoes, diced
  • 1/4 cup green onions, chopped
  • 3/4 cup buttermilk
  • 1 large egg, beaten

Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, baking powder, salt, and pepper. Cut in chilled butter until crumbly.
  3. Add cheese, tomatoes, and green onions. In a separate bowl, whisk buttermilk and egg.
  4. Pour buttermilk mixture into the dry ingredients, stir until a dough forms. Turn onto a floured surface, knead briefly.
  5. Divide, shape into rounds, cut into wedges, and place on the baking sheet. Brush with beaten egg. Bake for 18-20 minutes until golden. Serve warm with butter or jam. Enjoy with soup or meats and vegetables.
