Creamed Chipped Beef On Toast Is a Forgotten Classic

Do you have a cherished childhood recipe? For me, it’s chipped beef on toast—a simple yet beloved dish. Despite its lack of sophistication and nutritional value, my fondness for it endures. Recalling my parents often making it during my upbringing, I’ve reserved this indulgence for an annual treat, typically on my birthday.

Ingredients:

  • 1 jar dried beef slices (rinsed and chopped)
  • 4 tbsp butter
  • 4 tbsp flour
  • Pinch of cayenne
  • 2 cups milk
  • Sea salt and pepper
  • Toasted bread

Making the Dish:

  1. “Rinse the dried beef slices well; they are VERY salty!” says the original recipe.
  2. Chop the beef into bite-sized pieces and set aside.
  3. In a large saucepan, melt butter over medium heat, add flour and cayenne, whisking for about 45 seconds.
  4. Slowly add milk, whisking continually, and then introduce the chopped dried beef.
  5. Cook, occasionally stirring until thickened. Season with salt and pepper to taste, then serve on dry toast immediately.

This nostalgic breakfast, though an annual indulgence, remains a timeless delight.
