Eggnog Poke Cake

Ingredients:

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup eggnog

  • 1 (3.4 oz) box instant vanilla pudding
  • 1/2 cup brandy (optional; can replace with additional eggnog)
  • 1 1/2 cups eggnog
  • 3 cups whipped topping
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Simple Preparation Steps:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch pan.
  2. Mix and Bake Cake: In a bowl, blend cake mix, eggs, oil, and eggnog. Pour the batter into the pan.
  3. Prepare Filling: In a separate bowl, combine vanilla pudding, brandy or eggnog, eggnog, whipped topping, cinnamon, and nutmeg.
  4. Poke Holes: Once the cake is baked, poke holes with a fork and pour the filling over, letting it seep in.
  5. Chill and Serve: Refrigerate, allowing the flavors to meld. Serve chilled for a moist, boozy, and festive treat.
