Mold on Cheddar Cheese: Can You Safely Cut Away the Moldy Spot or Should You Throw It Out?

Finding green, blue, or white mold on cheddar cheese can make you wonder whether the entire block needs to be thrown away. However, the answer depends on the type of cheese. Hard cheeses such as cheddar and Parmesan can often be saved, while soft cheeses generally need to be discarded when unexpected mold appears.

### Why Does Mold Develop on Cheese?

Mold can develop when cheese is exposed to moisture, air, or improper storage conditions. Even refrigerated cheddar can become moldy, especially after opening its packaging or handling it with unclean utensils. Although some cheeses are intentionally made with edible mold, unexpected growth on ordinary cheddar should always be treated carefully.

### Can You Cut Mold Off Cheddar?

Yes. According to general food-safety guidance, hard cheeses such as cheddar can often be kept if mold appears on a small section. Their dense texture and lower moisture content make it less likely for mold to spread throughout the block. The recommended approach is to cut away at least one inch (2.5 centimeters) around and beneath the affected area, using a clean knife. The remaining cheese should then be wrapped in fresh packaging and refrigerated.

### Which Cheeses Should Be Thrown Away?

Soft cheeses contain more moisture, allowing mold to spread beyond what is visible. Cream cheese, ricotta, cottage cheese, Brie, Camembert, and fresh mozzarella should be discarded entirely when unexpected mold appears. The same applies to shredded, sliced, and crumbled cheeses because contamination can spread more easily throughout them.

### How to Store Cheese Properly

Keeping cheddar refrigerated at 40°F (4°C) or below can help prevent unwanted mold growth. Always use clean utensils, wrap cheese properly, avoid excessive moisture, and return it to the refrigerator promptly after serving. Regularly checking its condition and following the manufacturer’s storage instructions can also help reduce spoilage.

### When Is It Safer to Throw It Away?

Not all molds are harmless, and their safety cannot be determined by color or appearance alone. Never taste questionable cheese to check whether it is safe. If mold covers a large area, the cheese has unusual texture changes, or you are uncertain about its storage, discarding it is the safest choice.
